An international grape variety introduced to the Bologna hills around forty years ago, it is produced on the estate from a polyclonal vineyard containing French clones. It is the last variety to be harvested at the end of the vintage: the destemmed grapes ferment on the skins for about thirty days. The late harvest and the presence of the seeds throughout the maceration process allow for greater color stability and a stronger structure in the wine. The resulting wine spends a period of maturation in vitrified concrete tanks, followed by 24 months of aging in French barriques. The result is a wine of great structure: barrel aging softens the grape’s typical tannins without overpowering them. Notes of ripe red fruits, blueberry, and black cherry blend harmoniously with the toasted and spicy nuances derived from the wood.
