A traditional wine of the Bolognese hills, wonderfully paired with dishes from Emilia’s regional cuisine, and historically enjoyed during celebrations and festive occasions. Harvesting and maceration are carried out in the same way as for the still Barbera: during racking, the fermenting wine is transferred into a pressurized tank at a controlled temperature for the secondary fermentation. Kaos Rosso shows a gentle, refined sparkle that highlights the fruity aromas typical of the grape. The marked acidity characteristic of Barbera, balanced by the residual sugar, gives the wine freshness. It is approachable, pleasant, with a bright fruity character, floral notes, and a more captivating palate than the still version.
