This wine is more complex than the sparkling version, produced from the ripest grapes, harvested from the oldest vineyards of the estate, over 40 years old.
The whole grapes are pressed, and the resulting must is left to settle overnight, then inoculated with selected yeasts.
Fermentation takes place at a controlled temperature to preserve the varietal aromas. The higher ripeness level of the grapes gives the wine greater structure.
In the glass it shows an intense straw-yellow color. On the nose, ripe yellow fruit notes stand out and persist on the palate, accompanied by spicy nuances, followed by the characteristic slightly bitter note typical of the grape variety.
